It's served as a dessert during Navratri and other fasts. Fasting isn't required. You can make this kheer anytime. It requires sago, sugar, ghee, and milk. By following our recipe, you can prepare this kheer in just 15-20 minutes. So, let's learn the complete method of making Sabudana Kheer.
Ingredients:
1/2 cup sago
1/2 cup sugar
4 cups full-fat milk
A few saffron strands
Chopped nuts (cashews, almonds, pistachios)
2 tablespoons ghee
1/4 teaspoon cardamom powder

Instructions:
First, soak the sago in 3/4 cup of water for 2-3 hours. Also, add 2-3 tablespoons of hot milk and saffron strands, and let it soak for a while.
Now, heat the ghee in a pan. Add chopped nuts and lightly fry. Remove from heat, transfer to a plate and set aside.
Now add the soaked sago pearls to the same pan and lightly fry. Add milk and let it boil. Cook on low heat for 10-12 minutes.
When the milk is reduced to 80%, add sugar or cardamom powder and cook until the sugar dissolves. Now add the chopped nuts and mix.
Now, Sago Kheer is ready to serve during fasting. You can serve it hot or cold.
