Ingredients:

1 cup Rajgira/Amaranth flour

1 tablespoon ghee + ghee for brushing on the rotis/parathas

Chopped coriander leaves

1 tsp jeera 

1/2 teaspoon salt

Water as needed

Instructions:

First, take the Rajgira flour into a bowl. Add salt, cumin seeds, ghee, and coriander leaves and mix well.

Add 1/2 cup of water, stirring occasionally, and let it rest for 10-15 minutes.

Knead it thoroughly to form a soft dough.

Tear off a ball of dough, dust it with dry flour, and roll it out gently. You can also apply ghee to it if you prefer.

Heat the pan, place the rolled-out roti on it, and fry it thoroughly on both sides for 10-15 seconds.

Apply ghee as needed, fry thoroughly, and remove. Similarly, prepare the remaining rotis.

Your Rajgira Roti is ready to serve. You can eat it with potato curry or yogurt.
