Although it takes a lot of time to make it, but when it (Angoor Rabri) is ready, it will look beautiful and delicious to eat. So let's know the complete method of this recipe (Angoor Rabri) without wasting time. 


Ingredients:

2 liters full-fat milk

1.5 cups sugar (1 cup + 1/2 cup)

4 cups water

2 tablespoons vinegar

1/4 teaspoon cardamom powder

Few saffron strands

1/2 tablespoon yellow food color (optional)

1/4 cup dry fruits (cashews, almonds, raisins, pistachios)

Instructions:

First of all, heat 1 liter milk well in a thick pan. When it starts boiling, reduce the flame of the gas. Now add vinegar to it and stir for 25-30 seconds. When the water and chhaina separate from the milk, turn off the gas.

Now place a sieve on a bowl. Place a cloth on it and put the chhaina in it. Now pour cold water in it and wash it once. Now squeeze it well and keep it aside for 10-15 minutes.

After 15-20 minutes, take out the chhaina in a plate and mash it well with your palm so that there are no lumps in it. When it becomes like soft dough, make small balls of it. Prepare all the balls in the same way.

Now put 4 cups of water and half a cup of sugar in a pan and let it boil. After this, add all the prepared balls and let it cook for 15-20 minutes. Let it cook until the size of all the balls doubles. Then turn off the gas.

Boil 1 liter of milk well in a pan. Let it boil on high flame (from 1000 ml to 800 ml). Keep stirring it for 2-2 minutes. Keep adding the cream from the sides.

When the milk is cooked to 800 ml, add 1 cup of sugar and mix it. Then add saffron strands, cardamom powder and yellow food color and let it cook for 2 minutes. After this, add dry fruits to it and mix everything well. Now turn off the gas. Now keep it aside for 1 hour. After 1 hour the rabri will become thick.

Now squeeze the balls dipped in syrup and take them out in a serving bowl. Now add rabri to it. Serve it after it cools down.


Note:

You can increase or decrease the sweetness as per the requirement.

Adding food color is optional.
