Ingredients:
To make the batter: -
1 cup all-purpose flour
1 tbsp ghee
1 packet Eno (5 gms)
Water as required (approx. 1 cup)
For the syrup: -
1.5 cups sugar
1 cup water
Saffron seeds
1/4 tsp cardamom powder
1/2 yellow/orange food colour
1 tbsp lemon juice
For frying: -
Oil/ghee

Instructions:
First of all, mix all-purpose flour, ghee and Eno in a bowl. Now add water slowly. Make sure that no lumps form in it. This will not make the jalebi good.
Do not keep the batter too thick or too thin. Keep it as thick as the idli batter. After this, keep it aside for 15 minutes.
Now add 1.5 cups sugar and 1 cup water in a pan. Now add food colour, saffron strands and cardamom powder and mix. Now cook the syrup for 10 minutes. Then add lemon juice to it. Mix everything well and turn off the gas.
Put oil/ghee to heat in a large pan on high flame. Now to check if the oil/ghee is hot or not, put a drop of the solution in it. If it starts floating on the oil/ghee without burning, then understand that it is the right time to make jalebi.
Now fill the solution in a sauce bottle. If you want, you can also use an empty milk bag.
Now slowly make round jalebis. Reduce the gas flame to medium. Now with the help of tongs, fry them well from top to bottom for about 10-15 seconds.
Now immediately dip the prepared jalebi in hot syrup and take it out.
In this way, all the jalebis will be prepared one by one.
Finally, all the jalebis are ready. You can serve these with Fafda or Kanda Poha.
