Ingredients:
2 cups gram flour (besan)
1/4 cup oil (hot, for kneading the dough)
1/2 teaspoon carom seeds (ajwain)
1/2 teaspoon black pepper, coarsely ground (optional)
1/2 teaspoon baking soda
Salt to taste
Water as needed

Instructions:
Prepare the Dough:
In a mixing bowl, sift the gram flour to avoid lumps.
Add carom seeds, ground black pepper, baking soda, and salt.
Pour the hot oil over the flour mixture for extra crispness; mix with a spoon first, then with your fingers.
Gradually add water and knead into a soft, smooth, and slightly sticky dough.
Prepare for Frying:
Heat oil in a deep pan or kadhai over medium heat.
Grease the inside of the sev press (gathiya machine) and use the plate with the largest holes.
Shape the Gathiya:
Fill the gathiya press with the dough.
Press directly into the hot oil in long strips.
Fry over medium heat, turning occasionally until the gathiya are light yellow and crispy (do not over-brown).
Remove and Cool:
Remove with a slotted spoon and drain on paper towels.
Let them cool completely before storing in an airtight container.
Serving Suggestion:
For an authentic Bhavnagari experience, serve with tea, green chilies, and raw papaya salad!
Tips:
Do not overcook; Bhavnagari Gathiya should be soft and not too crispy.
