Ingredients:
2 cups gram flour (besan)
1/4 teaspoon carom seeds (ajwain)
1/2 teaspoon black pepper powder (freshly ground)
1/4 teaspoon baking soda
2 tablespoons hot oil (for tempering)
Salt to taste
Water, as needed

Instructions:
Prepare the dough:
Sift the gram flour into a large mixing bowl.
Add carom seeds, black pepper powder, baking soda, and salt.
Add 2 tablespoons of hot oil (this will make the gathiya crispy and light).
Mix all the ingredients well.
Gradually add water and knead into a soft, smooth dough (not too stiff).
Shape the Gathiya:
Grease a sev press (gathiya maker) with a plate that has thick holes.
Fill the dough into the gathiya press.
Frying:
Heat oil in a deep pan over medium heat.
Once the oil is moderately hot, press the dough directly into the oil in long strands.
Fry on medium heat until the gathiya are light golden brown and crispy. Do not overcook; they should remain slightly soft inside.
Remove with a slotted spoon and drain excess oil on a paper towel.
Cool and Serve:
Let them cool completely before storing them in an airtight container.
Serving Suggestion:
For an authentic Gujarati snack experience, serve Vanela Gathiya with fried green chilies, papaya sambharo, and masala chai.
