Ingredients:

2 cups gram flour (besan)

2 tablespoons rice flour (for extra crispiness, optional)

1/2 cup fresh mint leaves

2-3 green chilies

1/2 inch ginger

1/2 teaspoon cumin seeds

1/4 teaspoon asafoetida (hing)

1/2 teaspoon turmeric powder

1/2 teaspoon chaat masala or amchur powder (optional)

2 tablespoons hot oil or melted butter

Salt to taste

Water (as needed)

Oil for frying


Homemade Pudina Sev Recipe 


Instructions:

Wash the mint leaves, green chilies, ginger, and cumin seeds and grind them into a fine paste with a little water.

In a large bowl, combine the gram flour, rice flour, turmeric, asafoetida, chaat masala, and salt.

Add the mint paste and hot oil/butter to the dry ingredients. Mix well.

Gradually add water and knead into a soft, smooth dough (not too sticky or too stiff).

Grease the sev press and use a fine or medium-holed disc.

Heat oil in a deep frying pan over medium heat.

Fill the sev press with the dough and press directly into the hot oil in a circular motion.

Fry the sev until golden brown and crispy. Remove and drain on paper towels.

Once completely cooled, break into pieces and store in an airtight container.


Tips:

You can adjust the amount of green chilies and mint according to your preference.

Ensure the dough is soft enough to press easily, but not too loose.
