Ingredients:
2 cups gram flour (besan)
1–1.5 teaspoons red chili powder (to taste)
1/2 teaspoon turmeric powder
1/2 teaspoon carom seeds (ajwain)
1/2 teaspoon black pepper powder (optional, for extra spiciness)
1/4 teaspoon asafoetida (hing)
1/4 teaspoon baking soda
2–3 tablespoons hot oil
Salt to taste
Water as needed

Instructions:
Prepare the Dough:
Sift the gram flour into a mixing bowl to remove any lumps.
Add the red chili powder, turmeric, carom seeds, black pepper (if using), asafoetida, baking soda, and salt.
Add the hot oil and mix well with your hands until the mixture resembles breadcrumbs.
Gradually add water and knead into a soft, slightly sticky dough.
Shape the Gathiya:
Grease a sev/gathiya press fitted with a thick-holed disc.
Fill the press with the dough.
Frying:
Heat oil in a deep frying pan/wok over medium heat.
Press the dough directly into the hot oil in long strips.
Fry over medium heat, turning occasionally, until the gathiya are light golden brown and crispy, but not too hard.
Remove and drain on paper towels.
Cool and Store:
Allow the spicy gathiya to cool completely before storing them in an airtight container.
Serving Suggestion:
Enjoy with fried green chilies and a cup of tea, or serve as a crispy snack with chutney.
