The paratha is filled with a mixture of vegetables and spices, then cooked until golden brown. It makes a nutritious and delicious meal, perfect served with yogurt, chutney, or pickle.


Ingredients:

* 2 cups whole wheat flour

* 1 cup mixed grated or finely chopped vegetables (carrots, potatoes, cauliflower, spinach, peas, etc.)

* 1 small onion, finely chopped

* 2 green chilies, finely chopped (optional)

* 2 tablespoons chopped fresh coriander

* 1/2 teaspoon cumin seeds

* 1/2 teaspoon garam masala

* 1/2 teaspoon red chili powder

* 1/2 teaspoon turmeric powder

* Salt to taste

* Water (as needed for kneading the dough)

* Oil or ghee for cooking


Tasty & Healthy Mix Vegetable Paratha


Instructions:

1. In a large bowl, combine the whole wheat flour and salt. Gradually add water and knead into a soft dough. Cover and let it rest for 15 minutes.

2. In another bowl, combine the grated/chopped vegetables, onion, green chilies, coriander, cumin seeds, garam masala, red chili powder, turmeric, and salt. Mix well.

3. Divide the dough into equal-sized balls. Roll each ball into a small circle.

4. Place 2 tablespoons of the vegetable mixture in the center of each circle. Bring the edges together to seal and gently flatten.

5. Roll out the filled ball into a paratha, being careful not to let the filling spill out.

6. Heat a griddle or pan over medium heat. Place the paratha on the hot griddle and cook for 1-2 minutes, until bubbles start to appear. Flip and apply a little oil or ghee on top. Cook until golden brown on both sides. 7. Repeat this for all the parathas.

8. Serve hot with yoghurt, pickle, or chutney.


Tips:

- Adjust the spice level according to your taste.

- If the vegetables have excess moisture, squeeze out the extra water.
