Chocolate Cookie Wafers

1 cup all-purpose flour

½ cup unsweetened cocoa powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup (1 stick) unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 tablespoons milk


Filling

1.5 quarts (approx. 1.4 liters) of your favorite ice cream (Vanilla, chocolate, or strawberry are classic choices)

Instructions


Make the Cookies:

In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Beat the butter and sugar together until light and fluffy (for about 2–3 minutes).

Mix in the egg and vanilla extract.

Gradually add the dry ingredients (flour mixture) and mix until everything is well combined. Add the milk to help bind the dough together.

Divide the dough into two portions, flatten them into round discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C). Roll out the dough on a lightly floured surface to a thickness of about ¼ inch.

Cut it into rectangular pieces (approx. 3x2 inches) or use a round cookie cutter.

Bake on a parchment-lined baking sheet for 10–12 minutes. Do not overbake—they should just be slightly firm.

Allow them to cool completely on a wire rack before assembling the sandwiches. 


Assemble the Sandwiches:

Let the ice cream sit at room temperature for 5 minutes to soften slightly.

Place a large scoop of ice cream onto the flat side of a cookie.

Top with a second cookie and gently press down until the ice cream reaches the edges.

Wrap each sandwich in plastic wrap and place in the freezer for at least 2 hours before serving.


Tips

Uniform Thickness — To ensure the cookies are uniform, roll the dough between two sheets of parchment paper; this prevents the cookies from breaking while being eaten.

Ice Cream Slab Method — Spread the softened ice cream about ½ inch thick onto a parchment-lined baking sheet, let it freeze completely, then cut it into cookie-sized pieces; this results in neater, better-looking sandwiches.

Mix-ins — Before placing the sandwiches in the freezer, roll the edges in mini chocolate chips, sprinkles, or crushed graham crackers. Flavor Combinations — Try mint chip ice cream with chocolate cookies, or brown butter vanilla ice cream with Snickerdoodle-style wafers.

Storage — Wrapped sandwiches stay fresh in the freezer for up to 2 weeks.
