Ingredients:
2 cups gram flour (besan)
2 tablespoons oil (hot, for kneading the dough)
½ teaspoon carom seeds (ajwain)
½ teaspoon black pepper (coarsely ground, optional)
¼ teaspoon turmeric powder
¼ teaspoon baking soda
Salt to taste
Water as needed
Oil for deep frying

Instructions:
Prepare the dough:
In a large mixing bowl, combine the gram flour, carom seeds, black pepper, turmeric powder, baking soda, and salt.
Heat 2 tablespoons of oil and add it to the flour mixture (this makes the gathiya crispy). Mix well.
Gradually add water and knead into a soft, smooth dough. The dough should not be stiff.
Shape the Gathiya:
Grease a sev maker (with a thick-holed plate) and fill it with the dough.
Frying:
Heat oil in a deep pan over medium heat.
Press the dough through the sev maker directly into the hot oil, forming long strands.
Fry the gathiya until light golden brown and crispy. Do not overcook; they should remain slightly soft inside.
Remove with a slotted spoon and drain on paper towels.
Serving:
Let them cool completely before storing in an airtight container.
Serve as a snack with tea or with chutney or pickle.
