Ingredients:
3 medium potatoes (Aloo)
1/2 cup sugar (to taste)
1/4 cup ghee (clarified butter)
1/2 cup milk
1/4 teaspoon cardamom powder (Elaichi)
2 tablespoons chopped nuts (cashews, almonds, optional)

Instructions:
1. Boil and peel the potatoes. Mash them well while they are still warm.
2. Heat ghee in a heavy-bottomed pan. Add the mashed potatoes and fry over medium heat for 4-5 minutes, stirring constantly to prevent sticking.
3. Add the milk and mix well. Continue cooking for 3-4 minutes more, until the mixture thickens.
4. Add the sugar and cardamom powder. Stir constantly; the mixture will become loose, then begin to thicken again as the sugar melts and evaporates.
5. Continue cooking, stirring frequently, until the halwa pulls away from the sides of the pan and becomes shiny.
6. Add the chopped nuts and raisins, mix well, and cook for another minute.
7. Serve hot, garnishing with more nuts if desired.
