Ingredients:
2 medium-sized sweet potatoes
2 tablespoons ghee or peanut oil
1 teaspoon cumin seeds
1 green chili, finely chopped (optional)
1 teaspoon grated ginger
Rock salt to taste
1/2 teaspoon black pepper powder
1 tablespoon lemon juice
1 tablespoon chopped fresh coriander (optional)

Instructions:
1. Wash, peel, and cut the sweet potatoes into small pieces.
2. Boil or steam the sweet potato pieces for 6-7 minutes until they are slightly tender (not completely mushy), then drain the water and set aside.
3. Heat the ghee or peanut oil in a pan over medium heat. Add the cumin seeds and let them splutter.
4. Add the grated ginger and green chili. Sauté for a few seconds.
5. Add the boiled sweet potato pieces. Sprinkle with rock salt and black pepper. Mix gently.
6. Sauté for 4-5 minutes, stirring occasionally, until the sweet potatoes are lightly golden brown around the edges.
7. Turn off the heat. Add the lemon juice and chopped coriander. Mix well.
8. Serve hot as a nutritious and delicious vegetable dish during fasting days.
