Ingredients:

1 cup rice

1/2 cup yellow moong dal

1 medium-sized potato, chopped into pieces

1 medium-sized tomato, finely chopped

1 medium-sized carrot, finely chopped

1 medium-sized capsicum, finely chopped

1/4 cup fresh green peas

1 bay leaf

5-6 black peppercorns

1 cinnamon stick

1 large cardamom

2 green cardamoms

1/2 tbsp coriander leaves

2-3 large cardamoms

1/2 tsp cumin seeds

A pinch of asafoetida

1 tsp red chilli powder

1/2 tsp coriander powder

1/4 tsp turmeric powder

1/4 tsp roasted cumin seeds powder

Salt to taste

Coriander leaves for garnishing

2-3 tbsp ghee


Satvik Dal Khichdi


Instructions:

Firstly, dry-roast moong dal in a pan. Make sure it does not burn.

Now, wash moong dal and rice twice with clean water. Now add 1-2 glasses of water to it and soak it for 10-15 minutes.

Now, heat the ghee in a large vessel. Add all the dry spices (bay leaves, cloves, black pepper, coriander, cinnamon, big cardamom, green cardamom) and fry.

Now add cumin seeds and asafoetida. Now add chopped vegetables (potatoes, peas, carrots, capsicum, tomatoes) and mix well.

Now cover all the vegetables well and let it cook for 10-12 minutes.

Now add turmeric powder, coriander powder, red chili powder, cumin powder and mix well. Then cover and cook for 2 more minutes.

Now add salt as per taste and mix. Now add 2 cups of water and let it boil. Here you can increase or decrease its quantity according to your need.

Now add dal and rice, cover and cook on low-medium flame for 12-15 minutes. Sprinkle freshly chopped coriander on top. Keep stirring it in between so that it does not stick to the bottom.

Turn off the gas after 15 minutes. And add 1-2 tablespoons of ghee to it.

There you go, ISKCON's satvik and delicious khichdi is ready. Serve it hot.

Now heat ghee in a pan. Now add freshly grated coconut to it and mix well. Now add jaggery and mix it. Let it cook for 5 minutes.

Now add cardamom powder, chopped nuts and poppy seeds and mix everything and let it cook for 2 minutes. Keep in mind to keep the flame of the gas low.

Now turn off the gas and let this mixture cool down.

Now knead the dough once and make small balls of it.

Now take a ball and roll it round like a puri. Now add one spoon of coconut and jaggery stuffing to it and plit the corners of the puri and give it the shape of modak. Close the upper part of the modak properly so that it does not get spoiled while frying. You can also use modak mould.

Make all the modaks using the same method.

Now heat oil in a large pan. Keep the gas flame low.

Now add modaks one by one to the pan and fry till golden brown. Fry all the modaks one by one.

Now add rice flour to it slowly. Keep stirring it continuously so that it does not stick or form lumps.

Now cover it and cook for 5 minutes or till the rice flour absorbs the water. Keep the flame of the gas low.

Now turn off the gas and let it cool down. After it cools down, take it out in a plate and mash it once and keep it aside for 10 minutes.

Take milk in a bowl and soak a few strands of saffron in it for a while.

Now prepare the filling for the Steamed Modak.

For this, heat ghee in a pan. Now add grated coconut and fry it lightly. Add jaggery to it.

Cook it for 5 minutes and then add cardamom powder and mix. Now turn off the gas. Now let this mixture cool down as well.

Now make small balls of nariyal or gud ke mixture. Now apply light ghee on the modak mould. Now apply rice flour on the walls of the mould. After this, make a ball of coconut stuffing and put it in it. Now press it well so that it sets well. Make sure that there are no cracks in it.

Following the same process, prepare all the modaks one by one.

First of all, mix gram flour, buttermilk, salt, turmeric powder well in a bowl.

Now place a sieve in a thick bottomed vessel and filter it well. Now heat the vessel on medium to high flame.

Now keep stirring this solution continuously so that it does not stick to the vessel.

Keep stirring this solution till it starts leaving the vessel. It takes about 7-8 minutes.

When it starts leaving the vessel, to check it, spread it a little on the back of the plate and try to make a roll. If the roll is being made easily, then it is cooked. If not, cook it for 1-2 minutes more.

Which is completely different and special from Khaman Dhokla. It does not take much time to make it. And it is very tasty and soft to eat. So, let's see the complete recipe of making Surati Locho made from Chana Dal.


Ingredients:

1 cup chana dal

1/2 cup curd

1/4 cup urad dal

1/4 cup poha

Water as required

Salt as per taste

1/4 tsp turmeric powder

A pinch of asafoetida

1 tsp baking soda/Eno

1 tsp locho masala

1-2 tbsp groundnut oil/butter + 1-2 tsp oil

1-2 tbsp nylon sev

1-2 tbsp finely chopped onions

Coriander mint chutney


Surati Famous Street Style Food Locho 


Instructions:

Firstly, wash chana dal and urad dal thoroughly. Take a clean cloth and place both the dals on it and dry them well.

Now take a mixer jar and add chana dal, urad dal, poha (well washed), and curd in it and grind everything to make a fine paste. Add some water as required.

Now take out this paste in a bowl. Now add salt, turmeric powder, and asafoetida and mix well. Keep this batter aside for 15-20 minutes.

After 20 minutes, add baking soda/Eno and mix.

Heat water in a pan. Now grease a plate with oil and pour this batter (at least 2-3 tbsp) into it. Now sprinkle locho masala on it and steam it. Cook on medium to high flame for 5-7 minutes. Follow the same process for the rest of the batter.

Turn off the gas after 5-7 minutes. Your Surati Street style locho is ready. Now apply groundnut oil/butter, nylon sev and onions on it and serve hot.


Note:

To make the special chutney of locho, take a mixer jar and add a handful of coriander leaves, 8-10 mint leaves, 2-3 green chilies, 2-3 garlic cloves, 1 inch ginger and black salt as per taste, 1 tsp sugar, 1 tsp jeera, 1 tbsp lemon juice and 1-2 tbsp steamed locho and grind well. And your locho special green chutney is ready.

Steam the locho and serve hot; only then will it taste good. You can also sprinkle red chili powder on it instead of locho masala.

To make locho masala, take 1-2 tbsp Kashmiri red chili powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder, a little asafoetida, 1 tsp black pepper powder, 1/2 tsp black salt, 1/4 tsp turmeric powder and 1/2 tsp dry mango powder and mix well. That's it, your locho masala is ready.

You can also leave the locho batter to ferment for 10-12 hours. This will enhance its taste even more.

2 cups semolina

1 cup water (as required)

1 cup curd

Salt to taste

1 tsp baking soda/ Eno

1 medium-sized onion (finely chopped)

1 medium-sized carrot (finely chopped)

1 medium-sized tomato (finely chopped)

1/2 capsicum (finely chopped) (use red, yellow, green, as per your choice)

1/4 cup sweet corn (optional)

1/4 cup paneer (optional)

3-4 tbsp coriander leaves

Oil for frying


For tempering:

1-2 tbsp oil

1 tsp mustard seeds

1/2 tsp chana dal

1/2 urad dal

A pinch of asafoetida

Instructions:

To make appam first, in a bowl add semolina, curd or water as per taste. Add this and mix everything well. Now keep this batter aside for 10-15 minutes.

After 15 minutes, add baking soda/Eno and mix well. Add chopped vegetables like onion, carrot, capsicum, tomato, sweet corn, paneer and coriander leaves and mix well.

Now heat oil in a pan. Add mustard seeds, chana dal, urad dal and asafoetida and fry well. Pour this tempering on the appam batter and mix well.

Now heat a pan and apply some oil on the mould. Pour 1 spoon of appam batter in each mould and cover and cook for 5 minutes.

After 5 minutes, turn each appam and cook for 2-3 minutes more.

Prepare all the appams using the same process.

Now your South Indian style appam/paniyaram is ready to serve. Serve it hot with Sāmbhar and chutney

Instructions:

Firstly, prepare the batter by mixing semolina, curd and water in a bowl. Add salt as per taste and mix everything well. Now keep this batter aside for 15-20 minutes.

After 20 minutes, pour this batter into a mixer jar and prepare a soft paste. Now add baking soda/Eno and mix well.

Now add chopped onion, tomato, carrot, green chili and coriander leaves to this batter and mix well.

Now heat half a tablespoon of oil in a pan. Now take a tablespoon of oil and pour this batter into the pan. Cover and cook on low flame for 2 minutes. Then flip it and cook for 1-2 minutes.

Following the same procedure, prepare all the Uttapams one by one.

Note:

You can also make uttapam using idli/dosa batter. You can make it using the same method, add salt or water as required to the batter and add vegetables of your choice. Traditionally, uttapam is made in this way.

Tasty & Healthy Peanuts Chutney 


Instructions:

First of all, heat a pan and dry roast peanuts in it. Then cool it and peel it. Keep it aside.

Now take a mixer jar. Add cumin seeds, green chilies, garlic, ginger, salt as per taste and coriander leaves. Then add roasted peanuts and make a fine paste.

Make a thick and creamy paste by adding water as per your requirement. You can adjust its thickness as per your requirement.

Now take it out in a bowl. Now prepare the tempering.

Heat oil in a small pan. Now add mustard seeds and urad dal and fry it.

After this, add asafoetida, curry leaves, and dry red chilies and mix. Now add this tadka to the ground chutney and mix well.

There you go, your high-protein peanut chutney is ready. You can eat it with South Indian dishes like idli, dosa, or mendu vada.
